Follow These Simple Recipes To Have A Merry Christmas

Mulled Wine
Ingredients
750ml bottle of red wine
1 sliced clementine
1cinnamon stick
1 star anise
3 dried figs
4 cloves
3 black peppercorns
50ml brandy
Method
STEP 1
Pour the red wine into a large saucepan. Add the clementine, cinnamon stick, star anise, dried figs, cloves and black peppercorns. Heat very gently until simmering, then turn off the heat.
STEP 2
Fish out the whole spices and peppercorns with a spoon, then stir in the brandy. Ladle into mugs, or heatproof glasses to serve. You could drop in a slice of clementine to each.

Christmas Punch
Ingredients
a bunch of red grapes
750ml proescco
1l cloudy apple juice
Ice
250ml sloe gin
50ml herbal liqueur (we used Jägermeister)
1 ball stem ginger, finely sliced plus 2 tbsp of the syrup
3-4 sprigs rosemary
1 clementine, finely sliced
Method
STEP 1
The day before you want to serve, put the grapes in the freezer for around 8-12 hrs or until frozen. Chill the prosecco and apple juice in the fridge.
STEP 2
When you're ready to serve, put the frozen grapes and a generous handful of ice in a large 2-3 litre punch bowl and pour all of the remaining ingredients on top. Stir gently to combine, then serve. Sits well for up to 3 hrs before putting the ice in.

Toffee vodka
Ingredients
200g hard toffees
4 tbsp soft dark brown sugar
750ml vodka
You will also need
A funnel , coffee filter paper and a 1-litre sterilised lidded jar and 1 sterilised bottle (approx. 1-litre capacity)
Method
STEP 1
Unwrap the toffees and put in a plastic food bag and smash with a rolling pin to break them into small pieces. Tip the toffee shards into the sterilised jar, then add the sugar and a pinch of sea salt.
STEP 2
Pour the vodka over the toffee mixture and stir. Leave in a cool dark place for two days or until the toffees have dissolved. Shake the jar twice a day during this time.
STEP 3
Once the toffee and sugar has dissolved, line a funnel with a coffee filter paper and set it over the sterilised bottle. Slowly pour the mixture through. Seal and store in a cupboard for up to three months, and shake before serving.

Classic Snowball
Ingredients
10-15ml lime juice or lime cordial (optional)
50ml advocaat
50ml sparkling lemonade
ice, to serve
For the garnish
1 maraschino cherry
Method
STEP 1
Fill a glass with ice and if using, add up to 15ml of lime juice or lime cordial (or to your taste). Pour the advocaat and lemonade over the ice and stir gently until the outside of the glass feels cold.

Garnish with the maraschino cherry

Cosmopolitan Cocktail
Ingredients
45ml lemon vodka
15ml triple sec
30ml cranberry juice
10ml lime juice
ice
For the garnish
orange zest or a lime wedge on the rim of the glass.
Method
STEP 1
Shake ingredients in a cocktail shaker with ice and strain into a cocktail glass.
STEP 2
To make the garnish: hold a 3cm round piece of orange zest about 10cm above your cosmo and very carefully wave it over a lit match or lighter flame. Bend the outer edge of the zest in towards the flame so that the orange oils are released, then drop the zest into your drink.
